Clara Gardner is part angel, a quarter, to be exact. And because of her angelic-ness, she needs to fulfill her purpose, a task given to her for unknown reasons. Clara gets these dreams about this boy, and her quest takes her to Oregon where she meets him and then passes out. Next she meets this cowboy named Tucker, and things get a little wayward (for her purpose). So what you really need to do is go to the library and get this book because I said so!!!
Here are some recipes to get you thinking about the warm summer months to come. I know I am!
4 cups mango nectar
1/4 cup sugar
1/4 cup sweetened lime juice
Whisk the mango nectar, sugar, and sweetened lime juice together in a large measuring cup to dissolve the sugar. Chill in the refrigerator for 2 to 3 hours, until cold.
Pour the mango mixture into an ice cream machine and churn until frozen and slushy, following manufacturer's directions. Freeze until solid, another 2 to 3 hours.
A Berry Good Dessert
1 pint good quality Greek-style, plain, whole milk yogurt
4 to 5 pieces crystallized ginger, grated
1/4 to 1/3-cup honey, plus some for drizzling (look for orange blossom, clover or sage)
1 orange zested
2 pints blackberries
In a bowl, combine the yogurt, grated crystallized ginger, honey and orange zest. Let the yogurt mixture sit for about 5 minutes, the flavors will meld together a bit. Divide the blackberries between 4 dessert bowls, top with a large dollop of the yogurt mixture, and then give each dollop a drizzle of honey for a sweet finish.
